Grilled Chicken-Finger Fajitas with Peppers and Onions


  • 1/2 cup Mexican crema or sour cream
  • 2 teaspoons taco seasoning or Mexican seasoning blend
  • 1 pound chicken breast tenderloins
  • 2 tablespoons fajita seasoning blend
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 tablespoon bottled hot sauce (such as Cholula)
  • 1 fresh poblano pepper, stemmed, quartered lengthwise, and seeded*
  • 1 red sweet pepper, stemmed, quartered lengthwise, and seeded
  • 1 onion, peeled and cut crosswise into 1/3-inch-thick rings
  •  Olive oil

I ran across this recipe on the Betty Crocker website and it looked so good, I had to share it.


Beef Stroganoff

I love Beef Stroganoff.  It’s one of the easy-to-throw-together comfort food.  I usually combine it with egg noodles, rice, or as a stand-alone meat dish. I would love to know of some other ways that this mixture could be used….any suggestions?

This  recipe is similar to my Swedish Meatballs except I’m starting with ground beef instead of frozen meatballs.  If you like Beef Stroganoff, check it out and let me now what you think.

Ham & Sausage Lasagna

Twelve years ago, I ate this Ham and Smoked Sausage Lasagna at a friends house and absolutely loved it.  She was kind enough to give me the recipe and I have been making it from this little sheet of paper every since.


This lasagna is very different from other lasagna recipes.  Part of the appeal of this recipe is that it is on the milder, less greasy side and it’s super easy to make.  No chopping onions or adding spices or special cheese needed.  This is really great for someone that can’t eat the harsher sausages that can be found in some lasagna recipes.
