Quick Pumpkin Drop Biscuits

You will notice that my Pumpkin Drop Biscuits are sitting next to my Homemade Apple Butter.  That’s because I was sitting there looking at all of this beautiful, yummy apple butter I had just made and I had nothing to put it on.
I thought it’s fall and the temperature has dropped from the 90’s to the 80’s (that’s  all the temperature has to drop for me to start thinking pumpkin) and I did have a can of pumpkin in the cabinet so I’m thinking pumpkin biscuits.  I set the can of pumpkin out on the counter and start searching again.  Aha…Bisquick.  I know there are probably gasp about now from all of you people who make everything from scratch and if it was the weekend and I had time, I probably would to but ….I want biscuits now.  Like I’m staring at the apple butter and I NEED a biscuit to put it on!

 Ingredients:

  • 1½ cups. Bisquick mix
  • ½ cup canned pumpkin puree
  • 1 Tablespoon granulated sugar
  • 5  Tablespoon milk  (OR 5 tablespoons of pumpkin spice or vanilla caramel liquid coffee creamer)

*Note: Canned pumpkin varies in thickness.  Mine is usually thick and requires 5 tablespoons of liquid but I have had thinner pumpkin puree so add liquid one tablespoon at a time until you get desired thickness.

Directions:
Mix above. Drop by spoonfuls on parchment paper or ungreased cookie sheet.  Bake until golden brown at 450 degrees for 8 to 10 minutes.

Donut Bread Pudding

My Cinnamon Roll Bread Pudding was such a hit that I decided to try Donut Bread Pudding when I came across a box of day-old donuts.  I made it basically the same way as my Cinnamon Roll Bread Pudding making minor changes and using a different icing recipe.

As with most of my dessert recipes, liquid coffee creamer came into the picture.  I used vanilla with this batch though I used caramel with the last batch.  Picture a carmely (spell check says that’s not a word) bread pudding with a caramel sauce ~ Yummy !

This is one of those “need to know in case of zombie apocalypse” recipes.  Seriously though, we see natural disasters (tsunamis, tornadoes, hurricanes) happening frequently and every night you turn on the news only to hear about our down-spiraling economy.  I firmly believe we need to be able to take care of ourselves and our families.
