Mini Raspberry Pies
What do you do when you have raspberries going bad? You make mini raspberry pies of course! I was actually inspired by my strawberry pie cookies. I decided to make them larger and leave out the cream cheese. You can use store-bought jam or preserves or make you own. Since I already had the raspberries, I just made a raspberry filling by adding a little sugar and flour and cooking the berries down.
I know some of you will disagree with me, but the best part of a pie is the crust. I love fresh made chocolate and coconut pie but without the crust, it’s just pudding. I think that is why I am addicted to these little pies. There is just so much crust !
I loved my strawberry pie cookies so much that I will probably continue to make individual pies/cookies with my fruit and jellies that I make. They are so easy to grab for an individual snack and they can be frozen and pulled out as needed. There are also no messy plates, knives, or forks to clean up since you just hold them in your hand. I know I cheated and purchased pre-made pie crust but you can always make your own for pennies. It’s a great frugal dessert. I also do a lot of canning and I honestly don’t eat a lot of jelly or preserves so this is a great way to use up excess.
If you want to dress it up a little, you can serve them on a plate and add fruit, powdered sugar, whipped cream, or ice cream. (I didn’t have either when I snapped the photo above)
I used store-bought pie crust and used a lid from one of my plastic containers to cut the circles. I was able to make four mini-pies using the two pie crust that came in the package. I cut four circles for the bottom crust and four circles for the top crust. I took the top circles and cut them into strips to make the lattice. You could simply pinch the top and bottom crust together and cut a few slits in the top crust if you don’t want to do the lattice top. It’s up to you…..
There are not really any specific instructions. You need a crust and you fill it with anything you desire. For more instructions, check out the strawberry pie cookies I made. I have photos of me actually putting them together. Sorry, I forgot to photograph these as I made them

Instructions:
Roll out your pie crust and cut into the desired size of pie (hey, who says they even have to be round?). Fill the center of the cut circles with your desired filling leaving about 1/4 inch around the edge (if you get it too close to the edge, the goo seeps out). Top your circle with lattice or solid crust and press around the edges to seal it. I like using the lattice because some of the juice seeps out on top and then caramelizes…oh so good. There will be left over dough from the circles. I cut some of this into strips and used it as part of my lattice.
There are no secret or elaborate ingredients. Fruit pie is about as simple as it gets but there is something special about having your own individual pie. Imagine serving your guests these individual pies topped with cream and berries. Or, if you are like me, grabbing one of these little pies as you head out the door and eating it in the car as you dash to work or school.
