Bacon Wrapped- BBQ Meatloaf
Meatloaf is one of those down-home, comfort foods for some while others view it as something they had to eat as a child and never wanted to touch again as an adult. I don’t eat much meat and rarely crave it I decided over the weekend that I wanted to make meatloaf.
Let’s face it…meatloaf is just a giant meatball and I always have the urge to throw it on some pasta. I resisted the urge this time and decided to wrap it in bacon and top with BBQ sauce.
I have to say that I enjoyed it more than the meatloaf I grew up with. I also used thick cut pepper bacon which gave it a rich peppery taste. The BBQ sauce was so much better than ketchup, but spaghetti sauce is also a great topping.
BACON WRAPPED MEATLOAF
INGREDIENTS
- 1 pound ground beef
- 1 large egg
- 1 onion, chopped
- ½ cup breadcrumbs (I used seasoned)
- Salt and pepper, to taste
- Bacon slices ( I used thick-cup pepper bacon)
- ½ cup barbecue sauce
DIRECTIONS
- Preheat oven to 350° Fahrenheit
- Mix ground beef, eggs, onion, breadcrumbs, salt, and pepper in a large bowl.
- Line a 9×5 inch loaf pan first with parchment paper
- Lay 2 to 3 pieced of the bacon on the bottom of the pan.
- Shape a long log with the meat mixture and fit it inside the loaf pan.
- Place a layer of bacon on top of the meat mixture and then spread the BBQ sauce on top.
- Bake in the middle of the preheated for about one hour.
