SHORTBREAD COOKIES WITH JAM CENTER – Sweet Southern Blue

Shortbread cookies with jam are a delicious treat that combines the rich, buttery goodness of shortbread with the fruity sweetness of jam. Here’s a simple recipe for making shortbread cookies with jam:

INGREDIENTS

  • 1 stick (1/2 cup) softened butter
  • 1/4 cup powdered sugar
  • 1 egg white
  • 1 tsp vanilla extract
  • 1 tsp almond extract (optional)
  • 1/4 tsp salt
  • 1 1/4 cup flour
  • favorite jam or jelly

DIRECTIONS

  • Preheat oven to 425F. Soften the butter by letting it sit at room temperature for 40 minutes or microwave it for about 15-20 seconds. Add the powdered sugar and mix thoroughly.
  • Next add the egg white, extracts, salt and mix well.
  • Finally, add the flour and mix well.
  • Line a large baking sheet with parchment paper. Place the dough into a pastry bag with a large star tip and pipe cookies onto the baking sheet or roll dough into 2 inch balls.
  • Gently press in the center of each cookie (you can use your finger or the back of a spoon) about half way. You want to make a little dent, not a hole. Fill the centers with a jam.
  • Bake at 350F for about 8-10 minutes, or until the sides of the cookies are starting to turn golden brown.

These cookies are a delightful combination of buttery and sweet, with the jam adding a burst of flavor. You can experiment with different flavors of jam to find your favorite combination. Enjoy!
